Danilo Tersigni is a seasoned entrepreneur and spirits expert with over 15 years of experience in premium cocktail bars and hospitality businesses across Italy, Australia, and the UK. As the Managing Director and COO of Boutique Brands Ltd, a premium beverage distribution company in the UK, he has built a reputation for curating and delivering high-quality spirits. Now, as the founder and producer of Ruta Maya Rum, Tersigni combines his extensive industry knowledge with a passion for sustainability, Belize’s biodiversity, and Mayan heritage, producing a rum that reflects both quality and cultural depth.

TRL: What does rum mean for you? What made you fall in love with rum and when did it happen?

Rum, for me, is not just a spirit; it is a way to tell the story of a land and its people. I fell in love with rum when I first encountered the rich culture of Belize and the Perdomo family (which owns Travellers distillery), which is deeply tied to the land, the Maya, and the spirit of resilience. The flavors and depth of rum became a natural expression of that cultural heritage. Ruta Maya Rum was born from my desire to share that experience with the world.

TRL: Three essential characteristics that define the rum according to your perspective:

– Cultural Authenticity: Our rum is a tribute to Mayan heritage, crafted with respect for ancient traditions.

– Sustainability: We prioritize protecting Belize’s rich biodiversity, ensuring the rum is produced with minimal environmental impact and supporting local charities.

– Distinctive Flavor: Ruta Maya Rum carries the unique flavors of Belize, with rich, earthy undertones inspired by the natural landscape.

TRL: What is the most important contribution you have made in the rum industry?

The most important contribution has been introducing a rum that not only embodies quality but also stands as a symbol for sustainability and cultural preservation. Ruta Maya Rum represents a commitment to protecting biodiversity and promoting fair trade, with proceeds supporting the Mayan communities in Belize.

TRL: Benefits that the rum industry has given you:

The rum industry has provided a platform to highlight the beauty of Belize, its history, and its people. It has also allowed me to collaborate with like-minded individuals and organizations focused on sustainability, as well as build meaningful connections with the Mayan communities that Ruta Maya Rum seeks to uplift.

TRL: What’s another thing you are passionate about, in addition to rum? Why?

In addition to rum, I am passionate about spending time in the countryside, going for long walks, and connecting with nature. It gives me the space to think creatively, especially when developing strategies for new alcohol brands. I also have a deep interest in leadership and management, constantly looking for ways to grow as a leader and help others develop. Most importantly, I’m passionate about my family, who keep me grounded and remind me of what truly matters.

TRL: What is your favorite place for drinking rum?

My favorite place to enjoy rum is by the Belize River, watching the La Ruta Maya rowing race. There is no better way to enjoy a spirit so closely tied to the land and the traditions that inspired it.

TRL: Favorite drink + Recipe

I do love a classic Negroni: But a good twist with a rum is fantastic.

Ingredients:

  – 1 oz Ruta Maya Ouro Rum

  – 1 oz Vermouth Rosso

  – 1 oz Campari Bitter

  – Orange slice

TRL: Why is it important to educate the rum consumer? 

Educating rum consumers is vital because it helps them appreciate not just the flavors, but the history, cultural significance, and ethical considerations behind the spirit. Knowledge of production processes, such as sustainability practices, can shape consumer choices, fostering a more responsible and informed rum culture.

TRL: Any tips to train the palate and taste a good premium rum?

To train your palate, start with small sips and allow the rum to rest in your mouth for a moment before swallowing. Focus on distinguishing different layers of flavors—sweetness, spice, and wood. It’s helpful to taste rum neat first, then try it with a few drops of water to open up the more subtle notes. Or to make it easier, enjoy rum as you like it and in your own way. 

TRL: How can rum contribute to improve the crisis in some countries?

Rum can contribute to economic stability by supporting local agriculture, creating jobs, and promoting ethical trade. Ruta Maya Rum, for example, reinvests in the communities that help produce it, which strengthens the local economy and preserves cultural heritage.

TRL: Is the commitment to sustainable development the key to success for the permanence of the rum industry in the world? Why? 

Absolutely. Sustainability ensures that rum production doesn’t deplete the natural resources it relies on. By protecting ecosystems and communities, we guarantee that the rum industry can continue to thrive for future generations. Ruta Maya Rum’s focus on biodiversity and ethical practices is proof of this.

TRL: Who would you like to meet in the rum industry? What would you say to them?

I’d love to meet Master Blender Joy Spence from Appleton Estate. I’d tell her how much I admire her pioneering spirit and her dedication to crafting world-class rum while honoring tradition and culture, much like what we aim to do with Ruta Maya Rum.

TRL: What are your next goals in the rum industry?

One of my next goals is to expand our reach globally while staying true to our mission of sustainability and cultural preservation. We aim to grow awareness of the Mayan culture and the ecological diversity of Belize through every bottle of Ruta Maya Rum.

TRL: Plans you have when you leave the rum industry: 

I haven’t thought about it yet… haha

TRL: Why is the role of the bartender important in the rum industry?

Bartenders are the storytellers of the rum industry. They play a key role in educating consumers about the spirit’s origins, production, and the cultural context behind the bottle. A well-trained bartender can introduce customers to premium rums and help elevate their appreciation. Making rum fun again.

TRL: What is your advice for new generations in the rum industry?

My advice is to embrace both innovation and tradition. The future of rum lies in sustainable practices and respecting the heritage of the land and people who produce it. If you maintain a balance between quality, ethics, and environmental stewardship, you will make a lasting impact.
