TRL: Who is Javier Domínguez?
Born in 1969 in Madrid, my career in the distilled spirits industry took a decisive turn in 2012, when I established Spain’s first artisanal distillery, driven by my lifelong passion for distilling.
Among the brands I have created, RON MENTIDERO stands out as a testament to my commitment to excellence in rum production. With RON MENTIDERO, I set out to redefine the perception of aged distillates in Spain. We specialize in creating high-quality rums aged in Spanish oak barrels that previously contained exquisite wines, such as Pedro Ximénez and Rioja. This innovative approach not only enhances the depth of flavors but also uniquely blends the best characteristics of Caribbean distilling with Spanish traditions.
Our rums have gained international recognition, reflecting careful analysis and a deep understanding of aging techniques. As Master Blender, I pride myself on orchestrating complex blends that elevate the tasting experience, ensuring that each bottle of RON MENTIDERO embodies quality and craftsmanship.
My extensive travels have also influenced my approach to rum, allowing me to draw inspiration from a variety of cultures and flavors. I believe that a true artisan continually seeks to innovate while honoring tradition, and I strive to create rums that resonate with connoisseurs around the world.
TRL: What does rum mean to you? What made you fall in love with rum and when did it happen?
My journey with rum began at the tender age of ten, during an extraordinary trip to Venezuela with my father in 1979. It was there, during a natural paradise, that I first encountered the fascinating world of rum at the San Javier distillery. The lush fields of sugar cane, the intoxicating aromas emanating from the distillery, and the captivating production process opened my eyes to the magic behind this exquisite distillate.
That first visit awakened in me a deep curiosity and appreciation for the sweet elixir produced in those ancient copper stills. It ignited a passion within me that would blossom. Although my fervor for this remarkable drink waited patiently for me to come of age, it has since become an integral part of my identity: a lifelong love affair with the flavor, craftsmanship, and stories in each bottle of rum.
Today, rum symbolizes more than just a beverage; it embodies tradition, heritage, and the joy of connection. Every sip tells a story, and I am proud to be a part of this vibrant narrative.
TRL: Three essential characteristics that define rum from your perspective.
From my perspective, three essential characteristics truly define rum. Foremost, the heritage and craftsmanship involved in its creation. Each bottle carries with it the story of its origins, reflecting traditions passed down through generations. Then its flavor profile is complex; it is amazing how various factors, such as the type of sugar cane used and the aging process, can create such diverse and rich tasting notes. Finally, I would say that versatility is key. Rum can shine on its own or be the star of a cocktail, making it accessible to many drinkers. Whether enjoyed on its own or mixed in a refreshing mojito, rum brings people together and enhances any experience.
TRL: What is the most important contribution you have made to the rum industry?
We produce artisanal rums of the highest quality. This is a significant contribution. More specifically, we have promoted rum matured in Spain in sherry casks, something we have invested a lot of time and effort in over the last few years.
TRL: Benefits the rum industry has given you.
I think the most important contribution I have made to the rum industry is our commitment to producing the highest quality artisanal rums. This dedication is significant as it raises the standards of craftsmanship within the industry. More specifically, we have pioneered the use of sherry casks to age our rums in Spain, a unique approach that we have passionately developed over the past few years.
By investing time and effort in this innovative aging process, we not only enhance the flavor profiles of our rums but also create a richer narrative that connects the spirit to its cultural roots. This practice invites rum enthusiasts to explore extra dimensions of flavor and experience the complexity that can arise from a meticulous aging process. TRL: What is something else you have a passion for besides rum? Why?
Besides my deep passion for rum, I have a great enthusiasm for crafting other distillates that highlight distinctive production methods. In particular, I deeply appreciate quality gin. The art of creating exceptional gins fascinates me, as it allows for a different creativity and exploration.
While rum is rooted in the rich legacy of sugarcane, gin offers a unique canvas with its diversity of botanicals and flavor profiles. Experimenting with various ingredients, from fragrant botanicals to herbs and spices, opens up a world of possibilities. This distillation process is not just about combining flavors; it’s about telling stories and expressing individuality through each bottle. Just as I strive to create the best rum, I find great satisfaction in producing premium gins that celebrate the art of distilling and invite others to enjoy the craft in all its forms.
TRL: Where is your favorite place to drink rum?
My favorite place to enjoy rum is at home, on the terrace with friends. In winter, I love to gather around the fire, while in summer, it’s by the pool. Those moments of tasting rum, sharing friendly conversations and enjoying laughter are truly priceless to me.
TRL: Favorite drink + Recipe
My favorite way to enjoy rum is simply on the rocks. I’m not a big fan of cocktails, as I prefer to savor the authentic character of rum. I enjoy a good rum at room temperature or with a single large cube of ice to enhance the experience. The ice melts gradually, subtly cooling the rum and allowing its rich flavors and aromas to shine through. This minimalist approach allows me to fully appreciate the craftsmanship behind each bottle, making each sip a moment to savor.
TRL: Why is it important to educate the rum consumer?
Educating the rum consumed is vital for several reasons. First, it fosters a deeper appreciation of the craftsmanship behind each bottle, allowing consumers to understand the unique production methods, regional differences and flavor profiles that distinguish different rums. This knowledge not only enhances their tasting experience but also encourages them to explore and enjoy a wider range of products. In addition, informed consumers are better equipped to make choices that align with their preferences and values, such as supporting artisanal producers and sustainable practices. By promoting education within the rum community, we create a culture of appreciation and respect for this remarkable distillate, ultimately contributing to the growth and sustainability of the industry.

Training the palate to appreciate a good premium rum is a rewarding journey that involves both practice and mindfulness. First, I recommend starting with a clean palate; make sure there are no strong flavors or aromas, as this will help you focus on the subtleties of the rum. When tasting, take a moment to observe the color and clarity of the rum, which may offer clues to its aging process. Then gently swirl the glass to release the aromas and take a good inhale to identify the different nuances, which can range from fruity and floral to spicy and earthy.
As you take a sip, let the rum coat your palate-pay attention to the initial flavors, the complexity in the middle and the finish. Enjoy each sip slowly, and consider pairing the rum with simple foods that won’t overwhelm your taste buds, such as mild cheeses or dark chocolate. Finally, keep a tasting journal to record your observations and preferences, which will help you refine your palate over time and discover the subtleties that make premium rum so special.

One of our most exciting goals in the rum industry is to innovate in the aging process, particularly through the use of Spanish oak barrels. We are exploring advanced techniques that can significantly improve the flavor profile of our rums while reducing traditional aging times. By optimizing the interaction between rum and wood, we can extract complex flavors and aromas that mimic the richness typical of rums aged for 20 years or more.
Our approach involves a careful selection of oak barrels and temperature-controlled environments that facilitate the acceleration of flavors. This process not only enhances the product but also minimizes the environmental impact associated with long aging times. We believe this innovation can revolutionize the way consumers experience rum, making premium quality distillates accessible without the long wait. Our goal is to craft expressions that showcase the depth and character of well-aged rums, while celebrating the efficiency of modern techniques, offering a tasting experience that combines tradition and innovation.

I have no plans to leave the rum industry; it is not just a career for me; it is a lifelong passion that is embedded in my being. I intend to be a Master Distiller for as long as possible, as this industry is interwoven into the fabric of my life and spirit.
