Daphna Cuevas has bridged continents and flavors, bringing her passion for rum from Mexico to France. Born in Guadalajara, raised in San Antonio, and currently based in Bordeaux, she combines her background in international business, commercial engineering, and project management with a deep understanding of spirit aging. As a business development consultant and rum expert for Alter Oak, Daphna specializes in helping producers find the ideal barrels to enhance the unique character of their rums, connecting tradition, innovation, and commercial strategy in each project.

TRL: What was the biggest challenge you faced in launching into the rum industry, and how did you overcome it?
One of the biggest challenges for Alter Oak has been sourcing high-quality barrels that align with the brand’s identity and aging strategy. Consistency in barrel supply is a common struggle for producers, so my role is to bridge that gap—connecting them with barrels that enhance their rum’s story and quality.
On a personal level, establishing trust in a close-knit industry was a significant hurdle. Rum producers need complete confidence in the barrels they source, as these casks are integral to shaping their final product. Building that trust took time, persistence, and transparency. I focused on educating producers about our barrels, showcasing their impact on flavor profiles, and fostering genuine relationships through networking and industry events. Over time, consistent quality and word-of-mouth recommendations solidified my credibility.
The patience required in barrel aging is another challenge—it can take years to see the results. But witnessing how time, wood, and environment transform a spirit is incredibly rewarding. When the final product is revealed, it’s always worth the wait.
TRL: How do you see the rum market developing in the next 5-10 years, and what trends do you think will shape the future of the industry?
The rum market is undergoing an exciting transformation. Premiumization is a key trend, with consumers seeking aged, high-quality rums that offer unique cask finishes. Sustainability is also gaining traction, with distilleries adopting eco-friendly practices, such as using regenerated casks. Experimental aging and blending—like incorporating ex-wine or ex-sherry casks—will continue to push boundaries, creating innovative flavor experiences that captivate enthusiasts.
TRL: Can you share a personal experience or moment that significantly influenced your brand’s direction?
Each Rhum Fest has been a pivotal experience for me. These events have allowed me to connect with Master Roneros, industry experts, and passionate aficionados who’ve shared their knowledge and let me experience firsthand how the right barrel can elevate a spirit. Tastings and collaborations with producers have deepened my appreciation for the art and science of aging. Seeing how minor adjustments in cask selection can create entirely new flavor profiles reinforced my belief in barrels as storytelling tools—shaping a rum’s identity beyond distillation. These moments have fueled my passion for helping producers find barrels that match their vision and create something truly exceptional.
TRL: How do you balance tradition with innovation in your approach to helping producers in their rum-making or marketing?
Barrel aging is a traditional art, but innovation lies in how we match barrels to different rum profiles. For example, using ex-Sauternes, Cognac, or Armagnac casks introduces unique characteristics while respecting the essence of the rum. The balance comes from honoring tradition while exploring new aging techniques that enhance complexity and depth, creating rums that are both timeless and innovative.
TRL: What are some recent products you’ve launched that have been impactful?
At Alter Oak, we’ve expanded our barrel selection to include more diverse and unique casks, offering distilleries new possibilities for finishing their rums
TRL: How do you educate consumers about your business, and what’s the most important lesson they should take away?
Education is at the heart of what I do. Through tastings, workshops, and collaborations with distilleries, I emphasize that aging is an art, not just a process. The choice of barrel affects everything—from aroma to mouthfeel—and understanding this helps consumers appreciate the craft behind every bottle. The key takeaway? Aging is where rum truly develops its character, and the right barrel can make all the difference.
TRL: How do you manage quality and consistency as Alter Oak grows and enters new markets?
Consistency in aging is a challenge, especially with natural variations in wood. We work closely with producers to ensure a steady supply of high-quality barrels that meet their specific aging needs. By maintaining strong relationships with cooperages and distilleries, we secure the consistency they require while exploring innovative opportunities to push the boundaries of rum aging.
TRL: Can you share a collaboration or partnership that helped elevate your brand to additional levels?
Confidentiality is central to my work, as many distilleries entrust me with sensitive insights into their barrel selection, aging techniques, and R&D strategies. While I often can’t disclose specific collaborations, I’ve had the privilege of partnering with forward-thinking rum brands to experiment with rare cask finishes, multi-barrel maturation, and unconventional woods. These projects have led to exceptionally limited editions and special releases that captivate enthusiasts. Knowing I’ve played a part in crafting something truly unique—something that tells a story with every sip—is incredibly rewarding.”
TRL: What is your long-term vision, and how do you see your role in the rum’s evolution industry?
My vision is to continue helping rum producers craft exceptionally aged spirits by providing the best barrels and aging solutions. I also see Alter Oak playing a key role in educating the industry about the impact of different woods, toasting levels, and cask histories on rum aging. As rum gains recognition as a premium spirit, I aim to help distilleries push boundaries while preserving the heritage of this incredible industry.
TRL: What’s one piece of educational advice you would give rum lovers to better understand the spirit?
Pay attention to the aging process! While distillation is important, aging is where rum truly develops its character. Explore rums aged in different barrels—like ex-bourbon, sherry, or wine casks—and compare their profiles. Notice how wood influences taste, aroma, and texture. Don’t hesitate to ask about the barrels used; it can reveal a lot about the story and quality of the final product.
