Sérum is a super-premium rum brand distilled and aged in Panama. Recently, it was introduced in the Austrian market through a distribution partnership with In Good Spirits. Three vintage bottlings and two infused rums are offered in the rum lineup.

Serum rum was created in 2018, inspired by the construction of the Panama Canal, and willing to commemorate the country’s heroes and stories with every bottle. In 2020, the rum brand launched worldwide following a full redesign across its range.

Its expression is made of virgin sugarcane honey obtained from locally grown cane. The freshly squeezed sugarcane juice is slowly cooked to evaporate water until it reaches the consistency of what they call “dark honey.” They use this method to preserve more of the aroma and flavors in their future rum. After a single but precise column distillation, the spirit is placed in selected ex-bourbon barrels made of American white oak for long and slow maturation.

This process makes a rum that is well-balanced, with a complex character and a smooth taste. Even the Sérum bottle is itself a masterpiece. The rum comes in custom-made bottles inspired by old Panamanian rum barrels. The range includes seven expressions, including two infused rums and three vintage limited edition bottlings. Some of them are:

Sérum Elixir

Sérum Elixir is a super-premium, rum-based spirit bottled at 35% ABV. A blend of selected Serum rums aged up to eight years is flavored by long, slow maceration of fruit, herbs, and spices. Serum Elixir is inspired by the “estimated” recipe of such elixirs, used by workmen and slaves during the construction of the Panama Canal to protect, cure, and energize themselves.

This expression is sweet, fruity, and smooth. It features a rich aroma with notes of vanilla, honey, peach, and almonds. It delights the palate with rounded sweetness, a taste of exotic fruit, and decent spicy tones like cinnamon. Long lasting, pleasant finish.

Sérum Gorgas Gran Reserva

Sérum Gorgas Gran Reserva is a super-premium blend of rums that have been aged for up to eight years in bourbon barrels as well as bottled at 40% ABV. It has won awards all over the world. For instance, it was awarded at the HK IWSC Cathay-Pacific, winning the gold medal in the category of “Rums from 6–10 years, column still” and the trophy as the “Best Rum 2020.”

This is a smooth rum with deep character. It offers a spicy aroma with vanilla, orange zest, and wooden notes. Warming and full-bodied on the palate, exotic fruit and honey are followed by a subtle spiciness. Pleasant, dry, and long finish.

Sérum Ancon 10YO

Serum Ancon 10YO is a very good mix of rums that have been aged for ten years in bourbon barrels and then bottled at 40% ABV. It has an elegant, smooth, yet vibrant character. It features a rich aroma of vanilla, dried fruit, nuts, and a hint of charred oak. Full-bodied and rounded on the palate, dried figs, dates, and raisins develop into spicy and decently wooden tones. Long warming finish turns dry.

Sérum Puente Centenario

Sérum Puente Centenario is a limited-edition bottle of high-end Panamanian rum with an alcohol by volume of 40%. It was especially distilled in 2004 to celebrate the opening of the Puente Centenario Bridge over the Panama Canal and commemorate 100 years of Panama’s independence. Only 3,000 bottles of this exceptional rum spirit were produced in 2020, after 16 years of maturation in bourbon barrels.

It is sweet, round, and complex. The rum features a robust flavor of dried fruits, vanilla, and honey with notes of nuts and spices. Decent wooden traces in a long and pleasant finish.

In Austria, the brand Sérum Mamie just came out with a new version that has cocoa, vanilla, and toffee in it. It is bottled at 40% ABV and is a blend of Panamanian dark-aged rums. Serum Mamie presents aromas of chocolate and toffee and a creamy, round palate of honey and vanilla flavors with a slight cinnamon aftertaste. The spirit has an affordable profile that makes it a great option for a wide cross-section of consumers to pick up. The purpose of creating this rum is to offer customers a smooth and enjoyable super-premium rum blend with an unmatched taste.

In addition, it added two limited edition rums to its portfolio as part of the Panama Seasons Collection: Wet (40% ABV) and Dry (45% ABV). The company is now looking for some new, well-balanced rum with nice packaging for consumers.

Overall, Sérum is a premium, internationally awarded brand of rum produced and aged in Panama. It was awarded at the International Spirits Business Competition in London in 2020, where its magnificent bottle won a Gold Medal. It was also included in The Spirits Business’ compilation of spirits brands to discover at ProWein 2023.
