The brand, which has distilled pure sugarcane rum in Sainte-Marie, Martinique since 1765, continues to evolve while preserving its deep heritage. This latest release combines historical expertise with creative flair, positioning itself as a bridge “between generations of craftsmanship and a fresh, creative vision,” according to The Spirits Business.

What Sets Saint James’ Nectar du Maître de Chai Apart?

For the first time in its history, Saint James has developed a rum using controlled maceration. The process involves infusing aged agricole rum with prunes and Bourbon vanilla pods. The distillery matures the expression in its tropical cellars, allowing the local climate to enhance its depth and complexity.

This method produces a rich and aromatic profile. On the nose, this artisanal expression reveals notes of vanilla, gentle wood, macerated fruits, and almond kernels. The palate builds on these aromas, introducing flavors of candied fruit for a balanced, elegant finish.

Natural cloudiness or sediment may appear in the bottle—an expected result of the cask-aging process and absence of chill filtration.
