It then crosses the Atlantic to Jerez, Spain, where it undergoes a second aging phase for another five years in century-old VOS (Very Old Sherry) Palo Cortado and Pedro Ximénez barrels, acquiring exceptional smoothness and complexity.
This double aging process, part of the traditional Solera system, gradually blends rums from top to bottom, allowing them to age an additional 3–5 years in sherry oak barrels.
