Pedro Ximénez Rum: Don Q Introduces a Double-Aged Limited Edition

Don Q just expanded its celebrated Selección Exclusiva program with a new showpiece: a Double-Aged Pedro Ximénez rum designed for collectors and serious rum enthusiasts. As Bevnet reports, this release offers only 2,000 bottles, giving aficionados a rare chance to experience a harmony of Puerto Rican tradition and European cask-aging artistry. The expression lands on shelves and online starting November 15.

Why This Pedro Ximénez Rum Stands Out

Don Q shaped this expression through a two-stage maturation. First, the rum rests for at least seven years in American white oak ex-bourbon barrels. Then it transitions into imported Spanish Pedro Ximénez sherry casks for an additional 11 months, deepening its texture and layering in rich notes of dried fruit and honey.

In comments to Bevnet, Silvia Santiago, Master Blender and Senior Vice President of Manufacturing at Destilería Serrallés, explained the creative philosophy behind the release. She said the team constantly seeks ways “to honor tradition while embracing innovation.” She added that the Double Cask Finish reflects “the depth and elegance possible when Puerto Rican rum is paired with the complexity of European cask aging,” calling the expression a testament to the distillery’s dedication.

Tasting the Pedro Ximénez Rum Experience

With a 44% ABV (88 proof), this Pedro Ximénez rum shows a deep mahogany color accented by golden amber highlights. Its aroma opens with figs, apricots, toasted oak, and sherry wine—an aromatic profile shaped by both bourbon and sherry casks.

The palate continues this complexity: lush layers of raisins, vanilla, baking spice, and oak gradually unfold into a long, honeyed finish.

The Beverage Testing Institute (BevTest) awarded the rum a Gold Medal and a 90-point rating, recognition that Bevnet notes as proof of the spirit’s craftsmanship and innovation.

Each bottle of this limited Pedro Ximénez rum showcases the distillery’s devotion to patience and precision. Don Q blends aged Puerto Rican rum with the delicate nuances imparted during sherry cask finishing, creating an expression that bridges heritage techniques with contemporary flavor expectations.

Collectors and fans can find the Don Q Double-Aged Pedro Ximénez Cask Finish starting November 15 at select retailers and online.

The release reinforces the long-standing tradition of Destilería Serrallés, a family-owned producer with more than 160 years and six generations of rum-making history in Ponce, Puerto Rico. Known for its environmentally responsible practices and its status as a “World Class Distillery,” the company continues to lead the island’s rum sector with its flagship Don Q brand.

Serrallés USA manages the American distribution of Don Q, offering a broad portfolio that ranges from Gran Reserva XO to Don Q Pasión and Don Q 151.
