Maggie’s Farm Distillery in Pittsburgh’s Strip District and Hidden Harbor tiki bar, located in Squirrel Hill, are releasing a limited edition of their collaboration, Hidden Harbor rum, that’s been aged for over two-and-a-half years in ex-Maggie’s Farm rum casks.
Designed by Hidden Harbor primarily for its own behind-the-bar cocktail usage, the underlying rum is composed of 60% Maggie’s Farm white, a rum that’s distilled from the fermentation of raw cane rather than molasses. Maggie’s full-bodied reserve spirit made in the Queen’s Share method of re-distilling exclusively “tails” distillate makes up 20%. These earthy, creamy, grassy white rums are then complemented with a final 20% addition of sourced rums from Jamaica, Martinique, Guyana, Barbados, and Trinidad. This results in a rounded, fully flavored, 100-proof blend with fruity notes that shine brightly in both classic and contemporary mixed drinks. Aging this spirit for two years added a golden color with more complexity as the blend of spirits further melded the differences in terroir. Additionally, this 100-proof bottling has a smoother finish due to the evaporation of “hotter” more volatile components over time, making it perfect for sipping, as well as blending.
A limited number of bottles of the resulting Hidden Harbor 2yr Rum, labeled 1 to 200, have been produced. A pre-sale will be available at Golden Age Beer Co., 337 E. 8th Ave, Homestead. this Sunday, August 18th, 12-8pm for Hidden Harbor’s third and final Luau of the summer. This will be a very limited amount. In addition to Maggie’s Farm having bottles available for sale, there will also be tropical cocktails by Hidden Harbor, cold lagers by Golden Age, and a pig roast, with vegetarian and vegan options available. Live music by Thomas Wendt & Friends (12-3 p.m.) and Antonio Croes & Friends (4-7 p.m.). Entry is free, with no cover or tickets required. This is a rain or shine event. Aged Hidden Harbor bottles will be for sale at $55 per 750ml unit bottled at 100proof.
Remaining bottles will be sold at both Maggie’s Farm Distillery locations, at 3212A Smallman in the Strip District and at 1387 McGlaughlin Run Rd in Upper St, Clair, starting at 4pm on Wednesday, August 21st.
The original unaged Hidden Harbor White Rum was rated world’s best rum by the 2021 San Francisco World Spirits Competition, the world’s largest spirits competition. Hidden Harbor White Rum was also awarded a Double Gold medal and Best-of-Class for white rum in this competition.
