Heaven Hill has officially fired up production at its new Heaven Hill Springs Distillery, nearly 30 years after a devastating fire destroyed the original site. This moment marks a full-circle return to Bardstown, Kentucky—the revered “Bourbon Capital of the World.”
Since the fire in 1996, Heaven Hill operated out of the Bernheim Distillery in Louisville while continuing to age and bottle whiskey in Bardstown. Now, with its latest project, the company reclaims its roots and steps boldly into the future.
In 2022, Heaven Hill announced plans for a $135 million distillery. By the time construction wrapped, that investment had grown to $200 million. Earlier this week, on April 7, the team filled the first barrel at the Heaven Hill Springs Distillery, symbolizing both a milestone and a new beginning. Full completion of the site is expected by September.
In a recent The Spirits Business article, Co-president Allan Latts shared the company’s vision:
“Filling this first barrel is both a homecoming and a major step into the future of Heaven Hill. The Heaven Hill Springs Distillery reflects our deep roots in Bardstown, our long-term commitment to American whiskey, and our investment in building for the next 90 years with care, intention, and pride.”
The new distillery will initially produce 150,000 barrels annually, with the capacity to scale up to 450,000 barrels. Despite this expansion, the company will continue operating the Bernheim Distillery in Louisville—America’s largest single-site bourbon distillery.
Together, the two sites will support Heaven Hill’s diverse whiskey portfolio, including flagship labels like Elijah Craig, the Heaven Hill Heritage Collection, and Old Fitzgerald Bottled-in-Bond.
Sustainability lies at the heart of the Heaven Hill Springs Distillery design. The facility includes:
These initiatives aim to minimize environmental impact while maximizing operational efficiency.
To commemorate the distillery’s opening, Heaven Hill invited Charlie Downs, master distiller emeritus, to serve as honorary master distiller for the day. Downs brings a rare legacy—he’s the only person in company history to work at all four Heaven Hill distilleries:
Conor O’Driscoll, Heaven Hill’s current master distiller, reflected on the moment:
“Filling this first barrel brings full circle a journey nearly 90 years in the making. Having Charlie here connects our heritage to our future in the most meaningful way. It reflects the craftsmanship and commitment of the Springs team, whose work brought this facility to life and set the tone for the next chapter of Heaven Hill whiskey.”
Heaven Hill will celebrate its 90th anniversary in December 2025. With the launch of the Heaven Hill Springs Distillery, the company reinforces its role as a cornerstone of American whiskey, grounded in tradition, fueled by innovation, and led by a vision for the next nine decades.
