1) Who is Brian and Josephine Caribbean bar?
Josephine was a remarkable, eccentric, and vibrant woman born in Guyana, and grew up in Suriname where the love of food was at the heart of every family gathering.
In her honour, Brian Loe a Foe, founder and CEO of Josephine Caribbean BBQ established Josephine’s, a place where her legacy lives on through every plate we serve and every sip we pour.
With over two decades in the restaurant industry in The Netherlands – Brian’s passion for food and culinary influences started at a young age learning from his mother how to cook authentic Surinamese cuisine. A delightful combination of flavours from the rich traditions of Indian, Chinese, and Creole communities.
So, we invite all our guests to embark on a culinary journey with us. Together, we’ll share the true essence of the Caribbean— a celebration of life, love, and unforgettable flavours.
2) What does rum mean to you? What made you fall in love with rum and when did it happen?
It represents Caribbean culture, heritage and way of life – the richness, the colour, and spice means authentic Caribbean to me.
3) Three essential characteristics that define rum from your perspective
Rum, to me, is like a Caribbean carnival in a bottle – vibrant, diverse, and soul-stirring. Firstly, it’s the versatility – from light, smooth varieties perfect for cocktails to rich, aged rums that tell a story in every sip. Secondly, the depth of flavour – it’s a symphony of sweetness, spice, and everything nice. Lastly, it’s the culture it embodies – every glass carries the warmth and spirit of the islands.
4) What have been some of the contributions of your bar to the east African community?
We’ve created awareness about different types of rums beyond what is commonly consumed for instance Malibu rum. We introduce a more rich and diverse range of rums that our guests love. Some of our guests now only want to taste the brands and rums they have never heard of or seen in Kenya before.
5) Where do you see the rum consumption in Kenya today?
Rum in Kenya is like a new dance everyone is curious about. It’s gaining popularity, with people exploring beyond traditional drinks. There’s a growing appreciation for its versatility and the rich stories behind each bottle. I see it becoming a staple in Kenyan celebrations and quiet nights alike.
6) Besides running the Josephine Caribbean bar, what else are you passionate about? Why?
When I’m not at Josephine’s meeting and chatting with customers, I go for walks to Karura or enjoy a cigar at home.

8) What are some key education pointers in rum for drinkers
First, understand rum’s diversity – it’s not just for cocktails. Explore aged rums to experience depth. Second, the origin matters. Each region’s rum has unique characteristics – like tasting geography! Lastly, savour it. Rum is to be enjoyed slowly, letting every note tell its tale.
9) Do you have any tips for tasting a good premium rum?
The price doesn’t show what is a great or whack rum. Smell it first, like a whisper of what’s to come. Then, when you sip, let it sit on your palate. Identify the layers – is it fruity, spicy, smoky? Premium rum is a journey, not a race. Enjoy the ride.
10) How do you see the rum bar and it’s culture improving the tourism in East Africa
As I mentioned, I see it becoming a staple in Kenyan celebrations and quiet nights alike. I can’t speak to the rest of East Africa but Caribbean culture is about sharing and celebrations with family, friends and guests alike, as rum culture grows here it will naturally bring all walks of life together.
11) Who in the rum world would you like to meet? What would you say to him /her?
My rum loving customers who show up every week to promote and support the amazing service and food we offer and the love we have for Caribbean cocktails and vibe.
12) What are you next goals in the rum industry?
Continue to find and sell premium aged rums for our incredible customers and continue to inspire them to taste, savour and enjoy a diverse range of rums from our restaurant.
13) What are your plans when you leave the rum industry?
Leave the rum industry? That’s like asking a fish to leave the ocean! At Josephine’s we plan to serve rum along with unforgettable and authentic Caribbean food for our customers and friends for as long as we continue to operate in Kenya.
14) How important is the role of your bartenders in growing the rum Industry in Kenya?
Our bartenders are like ambassadors of rum and other spirits. They’re not just mixing drinks; they’re educating and inspiring our guests about rum’s rich heritage. Their passion and knowledge are key in elevating cocktail status from just a drink to an experience.
15) What’s your advice to those that are new to rum?
Start with an open mind and a curious palate. Try different types – light, dark, spiced. Attend tastings if you can. And remember, there’s no right or wrong way to enjoy rum – it’s all about what speaks to your palate.
