Rare Scottish Rum Release Blends Tropical Agricole with Islay Smoke

Independent brand Dorchadas Rum has launched its second installment in the collectible Washed Ashore series: Cask 02, an 11-year-old Dominican Republic agricole rum finished in a peated Islay quarter cask. With just 139 bottles available, this Scottish rum release continues to highlight the brand’s bold approach to maturation.

A Distinctive Approach to Maturation

Dorchadas Rum thrives on experimentation. The brand deliberately layers different environments and cask types to create complexity seldom found in rum. This method earned Cask 02 a shortlist spot for International Distilled Rum of the Year at the Scottish Rum Awards, according to Larder Magazine.

From the Tropics to Scotland

The journey of this Scottish rum release began in the Dominican Republic. Distillers used column stills and fresh sugarcane juice to create the agricole spirit, which then matured for nine years in ex-bourbon barrels. The tropical heat accelerated the process, pulling notes of caramel, ripe fruit, and vanilla into the rum.

Afterward, producers shipped the liquid to Scotland. In the cooler, damp coastal climate, maturation slowed significantly. This shift reduced evaporation rates, softened tannins, and encouraged subtle secondary aromas to emerge. Finally, the rum rested for two years in a peated Islay quarter cask, a smaller barrel that increased oak contact while infusing smoky, spicy, and savory layers.

The Flavor Experience

The final result delivers a rare profile: sweetness that transitions into smoke with striking clarity. Agricole freshness blends with oak depth and finishes with a sharp edge of peat.

At natural cask strength (62.3% ABV), Cask 02 presents vibrant notes of hot orange, buttery banana, vanilla, burnt biscuit, creamy filter coffee, pine, and spiced oak. Collectors and adventurous drinkers will find it equally suited for mindful sipping or pairing with smoky barbecue.

A Voice Beyond Rum

David Taylor, Managing Director of East Neuk Spirits Co., the parent company of Dorchadas Rum, explained the philosophy to Larder Magazine:

“Rum has traditionally been seen as a bit one-dimensional – especially by the whisky world, which Scotland is world renowned for. But change its environment, and you change its voice. In the tropics, this rum absorbed fruit, vanilla, and sugarcane brightness for nine years. In Scotland, it slowed down, gaining depth and dryness. In Islay oak, for two years, it took on smoke. Cask 02 is proof of how terroir and time can transform a spirit… and why single cask rum deserves a place alongside the most complex and celebrated whiskies.”

The Washed Ashore series serves as a rolling program of experimental single-cask bottlings. Each edition is unique and will not be repeated. After the success of Cask 01, expectations are high for this latest Scottish rum release.
