In 2021, Cédric and Nathalie Carpentier opened Hidden Distillery on their former goat farm in southern France, in Baillargues (Hérault). At the rum distillery, they started creating spirits using local, organic fruit and sugarcane from Cuba.
The distillery is home to dreamers who want to make things and make rums that are organic and ethical. They work together to mix the molasses by hand before using the distilling machine, then bottle it by hand. The recipes are mainly made by Nathalie, who participated in the world sensory analysis championship in the United States.
By combining traditional manufacturing methods with modern equipment, they come up with recipes, distillation methods, and aging methods that will make it possible to obtain these special essences. Hence, the quality of raw materials and supply circuits, respect for traditions and know-how, the time required at each stage, and the commitment to the consumer, guide each of their decisions.
Their catalog includes seven different types of rum with varying degrees of alcohol. They consist of innovative flavors like CBD rum, which accounts for the bulk of their sales. Last year, they made 5,000 bottles. This year, Cédric and Nathalie have developed a recipe for mass distribution that consists of a blending of their rum and a rum from Panama. They offer a stainless steel bottle that is easier to transport and, above all, is infinitely recyclable. The product will be distributed in the south of France.
