DropWorks Clear Drop rum headlines Mallow’s new Coconut Daiquiri

British producer DropWorks Clear Drop rum has reclaimed a coveted spot on the cocktail list at Mallow, the plant-forward sister to Mildreds in London. The seasonal serve marks the second time the restaurant group has selected the Nottinghamshire-made spirit for its summer menu.

A fresh twist on a classic Daiquiri

Mallow’s bartenders combine DropWorks Clear Drop rum with falernum, coconut, pandan, and fresh citrus to create a “refreshing, nutty-sweet” Coconut Daiquiri. Founder and master distiller Lewis Hayes told The Spirits Business that the drink “delivers an exceptional experience, with rich coconut melding into the subtly fruity notes of our Drop for a smooth tropical harmony.”

From Europe’s largest rum distillery to London’s hottest bars

Hayes launched DropWorks in 2023; the site now claims to be Europe’s biggest rum distillery. Just months after opening, DropWorks Clear Drop rum appeared at five Mildreds and two Mallow locations—its first on-trade listings. Two years later, the brand has broadened its reach to venues such as Stray in Manchester and Sister Ray in Liverpool while eyeing “hundreds more” accounts nationwide.

Leadership and ambitious growth targets

The distillery appointed former Diageo executive Graham Appleyard as CEO earlier this year. Under his guidance, DropWorks aims to triple sales by 2025 and position DropWorks Clear Drop rum as the UK’s go-to premium white rum.
