Easy Sailor Tiki Bar Brings 320 Rums, Flaming Cocktails, and Tropical Escape to Rochester

Rochester’s new Easy Sailor tiki bar on Park Avenue transports guests straight into a tropical escape. As Democrat & Chronicle described, the space feels like a soul-lifting refuge for both summer nights and Rochester’s famously gray winters.
The journey begins at the entrance, styled like a travel agency with posters, a mural, and even a porthole teasing the adventure inside. Once you step through, you find a cozy 1,500-square-foot space filled with bamboo, tiki masks, palm fronds, and quirky memorabilia ranging from a five-foot octopus to a six-foot shark.
A Fully Immersive Atmosphere
Owner and hospitality design consultant Eric Rozestraten told Democrat & Chronicle, “It’s truly immersive. It’s designed to be over the top. You’re not in Rochester as soon as you walk through the front door.”
Although the vibe feels tropical, most of the décor came from local sources in Rochester, Buffalo, and Syracuse. Local artist Laura Wolanin hand-painted murals, while Taylor Casilio and Andrew Hale crafted the woodwork.
Rozestraten partnered with Dan Herzog, Kelly McDonald, and Jay Speranza to bring the bar to life. The team already has experience in Rochester’s dining scene, with ventures like Jack’s Extra Fancy, Tony D’s, and Cotoletta.
320 Rums and Counting
The drink program sets Easy Sailor tiki bar apart. With 320 rums on hand and space for 140 more, co-owner and bar lead Dan Herzog claims it’s the largest rum selection in Upstate New York.
Herzog explained to Democrat & Chronicle that more than 80 countries produce rum, each with different definitions of the sugarcane-based spirit. This variety allows adventurous drinkers to sample rare options, like selections from Reunion Island.
Flaming Cocktails and Creative Twists
Cocktails here don’t just taste good—they put on a show. Drinks arrive in vibrant vessels with fruit garnishes, colorful straws, and even flames.
Groups can share the signature rum barrel, served in a giant shell bowl with long straws. This cocktail combines three rums with honey, tropical juices, pineapple, orchids, and a flaming lime half. For solo drinkers, the carrot cake daiquiri stands out, topped with cream cheese whipped cream, cinnamon flamed to release its aroma, and a bright orange hue.
The high-end slushy machine offers another surprise: the Lichi Chi Chi, a floral twist on the piña colada with vodka, lychee, pineapple, and coconut.
A Global Menu to Match the Drinks
Kelly McDonald created the food menu to complement the drinks with flavors inspired by rum-producing regions worldwide.
Some highlights include:
- Kung pao cucumbers with guava, Thai chilis, and Sichuan peppercorns.
- Mahalo pork platter, served in a hollowed pineapple with coconut rice and kelewele bananas.
- Yakitori skewers and wok dishes with Asian influences.
- Hawaiian ices drizzled with spiced blackberry syrup and topped with an apricot amaretto pour.
McDonald told Democrat & Chronicle the menu will evolve seasonally. “Come winter, expect food that’s comforting but still takes you on a journey.”
Rochester Welcomes Its New Escape
The bar’s soft opening coincided with Rochester’s second annual Tiki Week, drawing an enthusiastic response. Rozestraten told Democrat & Chronicle, “I think Rochester has been dying for something like this and they just didn’t know it.”
